Parenting The Chronically Ill: A Sticky Situation
Marshmallows. Full stop. Marshmallows are sticky, and gooey, and gooey, a campfire and Girl Scout staple. They are also loaded with Bit’s allergens.
I grew up baking and making candy, so I am no stranger to the kitchen or sticky messes, but the concept of making safe marshmallows was probably the most daunting thing I have ever tackled in the kitchen. I now do it regularly.
Bit was sick of going to overnights, camp outs and camp fires and not being able to eat s’mores. She had never had one, or a marshmallow, and wanted to be just like everyone else. So as fall came, and we helped host a camp fire for our area Girl Scouts I took on marshmallows and all the sticky mess that came with.
Internet research turned up a lot of interesting recipes, that all seemed to have a large amount of ingredients, or were endlessly complicated. I have a candy thermometer, but I didn’t want to use it. I didn’t want to have to temper anything, or buy 8 million ingredients I would never use again. Then I ran across this amazing recipe:
